Vegemite, the quintessential Australian spread, brings a distinctive umami saltiness that elevates more than just your morning toast. When mixed with caramelised onions, it creates a rich, savory depth that’s perfect for a triple cheese toastie. This combination offers a truly authentic Aussie flavour experience that’s hard to beat.
- In a HexClad 12"/30 cm Hybrid Fry Pan, heat oil over medium heat. Add onions and sprinkle with salt. Cover with a lid and cook for 10 minutes, stirring occasionally.
- In a small bowl, mix honey, Vegemite and water. Add to onions and cook uncovered for 8 minutes, stirring frequently until caramelised.
- Mix cheddar and mozzarella to combine. Spread both sides of each bread slice with butter. Set aside. Divide cheese between 4 slices of bread. Top with onion mixture and remaining bread to make sandwiches.
- Finely grate Parmesan and place on a plate. Press both sides of the sandwiches into the Parmesan.
- Wipe the pan clean with paper towels and return to medium heat. In two batches, add the sandwiches to the pan, cover with a lid and cook until the cheese starts to melt and the bread is golden, about 3 to 4 minutes. Turn and cook uncovered until the cheese is melted and the crust is golden and crisp, about 3 minutes. Cut in half and serve immediately.
