Frittatas are a dream to make, since they take just minutes and can be made with just about anything you have in your fridge. A hit of fresh chile in this one adds a pop of heat that sneaks up on you in the best possible way.

  1. Preheat the oven to 425°F/220°C. Heat the oil in the HexClad 8”/25 cm Hybrid Fry Pan over a medium heat. Add leek, rosemary and chile, season with salt and pepper and fry for 5 minutes, until nice and soft. Add the peas, cook for another minute, then stir in the eggs and half the cheese. Cook for 1 minute, then scatter remaining cheese on top. Transfer to oven and bake for 10 minutes, until eggs are set and cheese is golden on top. Serve sliced with bread.
